Best Ever GF Gingerbread Biscuits

Here is something fun and super delicious that you can bake with your littlies. My boys have been obsessed with gingerbread men since reading the tale of the GINGERBREAD man who runs away! Your little ones will love decorating these biscuits with all of the fun things. This is a nourishing alternative to the classic gingerbread recipe.




Ingredients:

3/4 cup almond meal

3/4 cup cassava flour

1 tsp baking powder

1/2 tsp ginger

1/2 tsp cinnamon

Pinch of salt

55g butter

2.5 tbsp honey

1 egg

1/3 cup cashew butter

3 tbsp saltanas for topping


1) Place the cashew butter, butter and honey into a small saucepan over a low heat until melted


2) Take out a large bowl and add in the almond meal, cassava flour, baking powder, ginger, cinnamon and salt. Mix gently to combine


3) Crack the egg into the dry ingredients and mix


4) Pour the melted honey, butter and cashew butter over the dry ingredients and mix quickly to ensure the egg does not cook


5) Mix well to combine


6) Place the mixture into the fridge for at least two hours*


7) Preheat the oven to 170 degrees and line a baking tray with baking paper


8) Roll out the dough and cut into your desired shape and top with sultanas


9) Bake for roughly 12 minutes until slightly golden on top


* If you just want to make cookies you can use the mixture straight away - however for the mix to be rolled out and cookie cutters used, it needs to sit in the fridge for at least two hours
