Banana & Ricotta Pancakes

Sunday morning is the pancake day in our house, do you have one too? 😋 This recipe is such a staple and a great way to include extra protein in a usually high carb breaky! More protein and fats = more sustained energy levels without the sugar crash of a high carb/sweet meal. If you don't have ricotta you can substitute this for yoghurt.



Ingredients:

1 ripe spotty banana

2 eggs

1/2 cup ricotta or yoghurt

3/4 cup milk

100g melted butter

1 1/4 cup spelt flour

1/2 cup almond meal

1 tsp baking powder

1/2 tsp bi carb soda

Pinch of salt

Take out a medium sized bowl & crack in your eggs. Whisk well, then mash in your banana & ricotta with a fork. Pour in the milk and melted butter, stirring to combine. Next grab another bowl, and in here add in all of the dry ingredients. Mix gently, then pour the wet into the dry to create your batter. Heat a frying pan over a medium heat, adding in some butter. Once hot, scoop your batter into the pan & cook your pancakes on the first side until you see little bubbles, then flip until cooked within.
