Gluten Free Banana Cassava Pancakes

These gluten free pancakes are seriously fluffy and totally delicious! They're gluten free pancakes that don't taste gluten free...because if you know, you know!


Ingredients:

1 ripe spotty banana

1 egg 

1/3 cup milk 

3 tbsp melted butter 

3/4 cup cassava flour 

3 tbsp collagen 

1/2 tsp baking powder 

1/4 tsp bi carb 


  • Into a large bowl mash the banana and crack in the egg. Whisk well. Pour in the milk 

  • Melt the butter and allow it to cool slightly, adding that to the wet ingredients and mixing 

  • Pour in the cassava flour, collagen, baking powder and bi carb. Mix well until incorporated 

  • Preheat a pan over a medium - high heat and add in extra butter for frying. Cook on each side for roughly 3 minutes until golden and cooked within
